Make Your Own Pumpkin Seed Snack!
Left with a bunch of pumpkin guts after carving jack-o-lanterns with the kids? Don’t just toss them out! You can turn that slimy goop into a tasty and healthy snack.
Pumpkin seeds are packed full of antioxidants, iron, zinc, and many other nutrients. On top of that, an ounce of pumpkin seeds only contains 151 calories! It’s super easy to make your own toasted pumpkin seed snack. Try out this quick recipe below:
- 1 ½ cups of pumpkin seeds
- 2 tsp olive oil
- ½ teaspoon garlic salt
- Non-stick cooking spray
Strain the pumpkin guts from the pumpkin seeds by rinsing the gunk off in a colander. After the seeds are cleaned off, place them on a baking sheet to dry overnight. The next day, preheat your oven to 325 °F. Take a clean baking sheet and spray it with the non-stick cooking spray. Toss the seeds in a bowl with the olive oil and garlic salt and then spread them out on a greased baking sheet. Bake the seeds for 20 to 30 minutes until the seeds are a golden brown, stirring the seeds around halfway through the cooking time. Sample the seeds and add more seasonings if desired!
