Fresh Burrito Bowl
Ever have a craving for Mexican food, but don't want the calories that go with it. Then this is the meal for you! This meal only takes about 10 minutes to prepare, and you don't really have to cook anything! The most work you have to do is mix a few things and cut a few vegetables, the rest is all done for you. This meal is healthy and delicious, and is only about 350 calories per serving!
- 1/4 cup black beans
- 1 teaspoon chicken broth
- Pinch of cumin
- Pinch of cayenne
- Pinch of garlic powder
- 1/2 cup red cabbage, sliced thin
- 3 ounces precooked grilled chicken breast, sliced thin
- 2 tablespoons nonfat Greek yogurt
- 2 tablespoons fresh salsa
- Fresh cilantro, for garnish
- Sliced green onions, for garnish
To Make This Delicious Meal
-Mix the oregano, cumin, cayenne, and garlic powder with the chicekn broth.
-Slice your vegetables and chicken thin so they are easy to mix.
-Microwave black beans with chicken broth mix on high for 30 to 45 seconds. Set aside.
-Add the cabbage to your bowl and put the black beans on top. Layer sliced chicken, Greek yogurt, salsa, and cilantro and green onions, and enjoy!
